Store in a cool and dry place, away from light and heat sources. Once opened keep refrigerated.

Dried tomatoes are a real tradition of Calabrian cuisine that starts from the cultivation of an ancient San Marzano tomato ecotype, almost seedless, not very pulpy and therefore suitable for natural drying.
For preparation, after having washed the tomatoes carefully, we dry them, cut them in half lengthwise, and arrange them on a flat surface with the cut side up; once dried, the dried tomatoes are seasoned with garlic, desalted capers, oregano, extra virgin olive oil.
Dried tomatoes can be stored for a long time (even more than a year). Once opened, however, it is advisable to place the jar in the refrigerator tightly closed with the tomatoes always covered with oil and use the product within a month.
